I used to think making your own bread was an all-day affair — the kind of slow, patient baking reserved for quieter weekends and far more organised people than me. But these yoghurt flatbreads changed all that.
The sort of recipe you can quickly cobble together for a simple Saturday lunch in minutes — often with little helpers getting involved along the way.

Ingredients (makes 8 flatbreads)
- 200g plain flour
- 200g plain yoghurt
- 1 tsp baking powder
- ½ tsp sea salt flakes (scrunched between your fingers)
Step-by-step method
Step 1 — Make the dough
Throw all the ingredients in a mixing bowl and stir until it’s easy to handle. Combine together with your hands into a big ball.

Step 2 — Shape
Divide the dough into 8 equal pieces and roll them into balls.
Using a rolling pin (or just your hands), gently flatten each ball into a rough circle.

Step 3 — Cook
Heat a dry frying pan over a medium heat.
Cook each flatbread for 1–2 minutes on each side until puffed, and lightly charred in places.

Step 4 — Serve
Serve warm straight from the pan, ideally with a big dollop of hummus and whatever salad you have to hand.
