I’ve been slightly obsessed with tacos ever since a trip to Mexico in 2016.

I ate them every single day — from tiny street stands to beachside cafés — always wrapped in soft corn tortillas and piled high with simple, fresh ingredients.

Ever since then, I’ve found myself trying to recreate those flavours at home — not in a complicated, all-day way, but in a way that actually works in real life. Simple ingredients. Big flavour. No overthinking.

These halloumi tacos are my weeknight version — perfect for a quick family dinner when time is tight but you still want something fresh and satisfying. Golden, crispy halloumi tucked into warm tortillas, topped with bright kiwi fruit salsa and creamy avocado.

It’s an easy vegetarian taco recipe that works beautifully as a family-friendly dinner.

A Note on Tortillas

As I mentioned… I’ve become a little obsessed.

In my search for the perfect corn tortilla, I’ve sourced masa harina and even bought a tortilla press to make my own. But this recipe is about speed, so we’ll park that for now.

If you can buy good soft corn tortillas, they really do elevate these crispy halloumi tacos with their slightly nutty, authentic flavour.

If not, soft flour tortillas work perfectly well too — especially on a busy night when you just need easy family dinner ideas that don’t overcomplicate things. Use what you can find. Dinner will still be delicious.

Ingredients (serves 2)
  • 8 small soft tortillas (corn if you can get them)
  • 1 block of halloumi
  • 2 firm kiwi fruit
  • 1 green bell pepper
  • 1 red onion
  • 1 avocado
  • 1 lime
  • 4 tablespoons of Greek or plain yoghurt
  • 1 teaspoon chipotle chilli paste
  • A few fresh coriander leaves

Plus your favourite tortilla chips for scooping up the extra salsa.

How to Make Halloumi Tacos with Kiwi Fruit Salsa
Step 1 — Make the kiwi salsa

Finely dice the kiwi fruit, green bell pepper and red onion.

Place in a bowl with the juice of half the lime. Stir through chopped coriander and set aside to let the flavours develop.

This fresh kiwi fruit salsa is what makes these tacos feel light and different from your usual vegetarian family meals.

Step 2 – Prepare the avocado

Slice the avocado into a bowl. Roughly mash with a fork, leaving some chunks for texture. Drizzle over a little fresh lime juice to keep it vibrant.

Step 3 – Mix the yoghurt

Split the yoghurt between two small bowls.

Leave one plain for little tastebuds. Stir the chipotle chilli paste into the other for a smoky, gentle heat. This simple chipotle yoghurt sauce turns the same base into a spicier dinner option — ideal when you’re feeding both kids and adults.

Step 4 – Warm the tortillas

Warm the tortillas in a dry frying pan for 20–30 seconds on each side until soft and pliable. Stack and wrap them in a clean tea towel to keep warm while you cook the halloumi.

Step 5 – Cook the halloumi

Slice the halloumi into strips.

Heat a drizzle of olive oil in a frying pan over medium heat and cook for 2–3 minutes on each side until golden and crisp.

Step 6 – Assemble

Lay the warm tortillas flat.

Spread over a spoonful of yoghurt — plain or chipotle.
Add a generous spoonful of kiwi salsa.
Top with golden halloumi.
Finish with mashed avocado and a few extra coriander leaves.

Serve immediately, with tortilla chips on the side for scooping up any extra salsa.

Every time I make these halloumi tacos, I’m transported back to a sunny beach in Mexico — and reminded that you can recreate those vibrant flavours at home in a quick, uncomplicated way.

You can keep it mild.
You can turn up the heat.
You can swap tortillas depending on what’s in the cupboard.

It’s flexible, fresh and fast — exactly what dinner should feel like in a busy family home.
